VEGAN OVERNIGHT CHIA OATS

INGREDIENTS

  • 35gr Oat Flakes

  • 3 Teaspoons of Chia Seeds

  • 150ml of Soy or Almond Milk

  • 2 Teaspoons of Honey

  • Almond Yogurt

  • Raspberries

  • Banana

  • Passion Fruit

  • Peanut Butter

  • Coconut Flakes

Directions

  1. Mix in a bowl: the oat flakes together with the chia seeds, the honey and the milk and place it in the fridge overnight.

  2. The next morning, take the bowl from the fridge and mix the oat flakes well.

  3. Enjoy garnishing your breakfast bowl with delicious toppings such as: almonds, yogurt, raspberries, banana, passion fruit, peanut butter and coconut flakes!


CHICKPEAS BALLS BOWL

INGREDIENTS

for the bowl

  • 60g Red Rice

  • Spinach

  • Sweet Potatoes

  • Brussel Sprouts

FOR THE Chickpea balls

  • 100g cooked Chickpeas

  • 4 tablespoons of Breadcrumbs

  • A handful of raw baby Spinach

  • Salt, Pepper, Olive Oil to taste

FOR THE SAUCE

  • A tablespoon of natural Soy Yogurt, Salt, Pepper and Oil

DIRECTIONS

  1. Cook the red rice according to the directions on the package label.

  2. Preheat the oven to 180 degrees and cook the sweet potatoes and the Brussel sprouts for about 35 minutes.

  3. Boil the carrots and drain the chickpeas.

  4. Put the chickpeas, the carrots a handful of fresh baby spinach, salt, pepper and a drizzle of olive oil in a blender and blend until you obtain a smooth and homogenous mixture.

  5. Form some chickpea balls and then place them in a hot pan with some olive oil for about 5 minutes per side.

  6. Now make the yogurt sauce by mixing some soy yogurt with salt, pepper and oil.

  7. Compose your bowl with rice, baby spinach, mixed vegetables, chickpea bowls and your delicious sauce!
